If you are looking for an easy recipe for a delicious pastry, search no further. Although biscotti’s might seem complicated and difficult to make, they are actually quite simple and delicious. You don’t need any equipment other than a mixer, an oven, bowls, and all of your ingredients.

  • Medium bowl
  • Large bowl
  • Whisk
  • Parchment paper
  • Baking sheet
  • Serrated knife
  • Ingredients

  • 1 cup- raw almonds (optional)
  • 2 ¼ cups- all purpose flour
  • 1 ½ teaspoons- baking powder
  • ½ teaspoon- salt
  • ½ cup- granulated sugar
  • ¾ cups- brown sugar
  • 3- large eggs, room temperature
  • ½ cup- olive oil
  • 1 tablespoon- almond extract
  • ½ teaspoon- vanilla extract
  • 1 teaspoon- lemon zest

Preheat your oven to 325℉ or 165℃. Then, if you decide to use almonds, spread them out on a baking sheet and toast them for 10-15 minutes. In a medium bowl, mix whisk together the flour, baking powder, salt, and sugars. In a larger bowl, whisk your eggs. Then add the olive oil, vanilla and almond extracts, and lemon zest and mix. Once your almonds are toasted, remove them from the oven and chop into the desired size. Add your flour mixture into the egg mixture, then add the almonds. Next, line your baking sheet with parchment paper and place your dough on the sheet in the form of a log. Put it in the oven for about 30 minutes, or until golden brown. Let it cool for about 10 minutes, then take a serrated knife and cut pieces into the desired size, usually between ½-¾ in. thick. Replace them onto the baking sheet and put them back in the oven for 10-15 minutes, flipping them over when they are halfway done. Take them out and let them cool before enjoying.
